I was just wondering if we have any cooks around here and thought I would share a couple of my recipes to see and start the thread.

Beef Brisket in Crockpot
3 medium potatoes, peeled and chopped
3 medium carrots, sliced
2 medium onions, sliced
0.75 teaspoon salt
0.5 beef brisket, approximately 2 pounds
1.5 cups water
1 can of cream of celery soup

In crockpot place potatoes, carrots and onions. Sprinkle with salt, and pepper; place brisket on top vegetables. Add 1 1/2 cups water and cream of celery soup. Cover; cook on low-heat setting for 12-14 hours. Slice brisket thinly across grain. Serve with the vegetables. Serves 6.
Note: You can substitute a chuck roast for the brisket if you trim the chuck roast well, as it is richer and will add more grease.
Note 2: The brisket will be so tender that you may have trouble cutting it after it is cooked, since it falls apart easily, so I cut it before I put it into the crockpot.


Scratch Banana Nut Bread

4 ripe bananas, mashed
3 eggs, well beaten
2 cups all-purpose flour
3/4 cup granulated sugar
1 teaspoon salt
1 teaspoon baking soda
1 & 3/4 cup chopped walnuts
1 teaspoon lemon juice to cut the baking soda taste.
2 tablespoons milk to make softer

In a mixing bowl, mix together the mashed bananas, milk, lemon juice and beaten eggs. Mix together the flour, sugar, salt, and soda well and then stir into liquid banana mixture until well blended. Stir in nuts. Pour batter into a 8x8-inch square pan or Bunt Pan and bake at 350 degrees F for 45 min to 1 hour, or until a wooden toothpick or cake tester inserted in center comes out clean. Makes 1 pan of banana nut bread. The Bunt pan cooks a little faster and will probably be ready in 45 min so test at about 35 min.

With the Scratch Banana Nut Bread I prefer the Bunt Pan but I always put the molded side down and show the part that you see when it is still in the pan because to me it looks much better. Sometimes I add a little coconut and / or some Maraschino cherries about a half cup to a cup of each.

I am a cook. I love to cook and am always looking for new recipes. I would be very interested in learning some regional favorites from people around the world.

Here are a few easy ones to share.

Pork Chop Dinner (feeds 4)

 
4 - 6 - ½ inch think pork chops
3 – Large potatoes
2 – Large Onions
1 – beef bullion cube
1 cup Water
3 TBS butter
Flour
Salt
Pepper
Kraft Powered Cheese
 

Slice potatoes into thin slices crosswise like potato chips. Slice onions thinly making rings.

Melt bullion cube in boiling water.

Melt butter in electric fry pan or large fry pan. Coat the pork chops in flour, salt and pepper.  Brown pork chops in butter.

Cover Pork chops with potatoes. Cover potatoes with Onions. Sprinkle cheese over onions. Pour beef broth/bullion over mixture until pan is half filled. Lift pork chops to allow broth under so chops don’t stick.

Cook over medium heat covered for 45 min or potatoes are fork tender, which ever is longer. Keep adding bullion/broth or water to half pan level for first 30 minutes. Allow level to drop to form gravy.


Apple Pie

 
4 red delicious apples cored, peeled and sliced
3 TBS sugar
½ tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ginger
1/8 tsp ground clove
1 TBS flour
2 TBS butter
pie crust top and bottom

Mix dry ingredients thoroughly. Put bottom pie crust in pie pan. Fill with apples. Slice butter into small pieces and place on top of apples. Sprinkle dry ingredients on top of apples and butter. Place top crust over apple mix. Seal edges and slice vent slots in top crust. Bake for 1 hour at 350.

I wouldn't be much good putting anything i can make in this thread because i can just about warm something up in a microwave. A few years ago a exploded an egg in a microwave and i've also completely melted a frozen chocolate cake. Anyone for toast ?

hehehe, cooking isn't for everyone. I love it and I am pretty good at it.

 I am actually a good cook. I don't ever make out recepies though. I just sort of do it without really thinking about steps or procedures. I guess I should start writing down some or something.

I have a decent memory of herbs and I can usually think about what goes with what really well. that helps a lot.

That is the way i am also Greg. I seldom actually follow a recipe. I know what I want things to taste like and then just make it.  I have had to start writing things down because my son wants to learn how to cook. He is demanding recipes and instructions. I am proud of him for wanting to learn, but makes my life difficult because I have to stop and think about what I am doing, write it down and then continue cooking.

my fiancee loves for me to cook but gets so mad at me because she wants to help and i never let her. I just can't follow some recipe so I never know what to tell her to help me with, and she isn't very good at things like cutting meat and prep work. I just have to cook a little, then taste and determine what else to put in it and just keep going like that.

I probably should write down some things though, because i'll go to cook something again and it never turns out the same way just based on how i cook.
