What's your favourite combination of colours for a basic web site?

I nearly always go for black text on white background for main content. And, lately I favour blue/purple menu blocks and scroll bars with yellow text. The background is a lighter blue than the menu. Example: http://www.templatetool.com/

For coolness I prefer orange text on black but I can't justify this for my sites. Also white/blue text on black can look good.

it's really depend from the site, but I should admit that I also tend to use similar gamma as you do...
generally I use rule that text should be of the opposite color from background so it would be easy to read... if I use black color for text, I use different shades of different colors, usually shades of blue which are not very bright...

For commercial type sites (Shops, things like that), I like just a bit of colour and white on black for main content area. I like your TemplateTool colours because it looks like you're having a bit of fun with them, and it doesn't disturb viewing in any way.

I think it's fun to play around with colours on freebie sites, personal sites, and especially web design sites. For instance, red and green actually look cool together (See this colour combo on 2advanced.com).
